When the grapes reach the ideal stage of ripeness, they are harvested and transported to the winery, where the winemaking process begins with complete destemming and light crushing. The grapes are then fermented separately in stainless steel vats at a temperature of 27ºC, followed by prolonged post-fermentation maceration.
