Gaspacho alentejano com presunto de porco preto, tomate, pepino, pimento e pão

Alentejo Gazpacho with Black Pork Ham

Alentejo gazpacho with black pork ham is a refreshing meal for hot days, made with ripe vegetables, ice-cold water, bread and a vibrant dressing of garlic, olive oil, vinegar and oregano. Unlike blended versions, the ingredients here are cut into pieces and retain their texture.

In this version, the ham is added just before serving. Its cured flavour adds depth to the fresh broth without taking the spotlight away from the tomato, cucumber and pepper. Serve the gazpacho as a generous starter or a light lunch.

Serves: 4
Preparation: 25 minutes
Chilling time: 30 minutes
Total time: about 55 minutes

Ingredients for Alentejo gazpacho

  • 700 g ripe but firm tomatoes
  • 1 medium cucumber
  • 1 small green pepper
  • 1/2 small onion
  • 2 garlic cloves
  • 80 g black pork ham, cut into thin strips
  • 200 g day-old Alentejo bread, cut into cubes
  • 60 ml Galega Single-Varietal Extra Virgin Olive Oil — 500 ml
  • 30 ml white wine vinegar, adjusted to taste
  • 750 ml ice-cold water
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

How to make Alentejo gazpacho with ham

  1. Prepare the dressing base. In a mortar, crush the garlic cloves with a generous pinch of salt until you have a paste. Transfer it to a large bowl and add the vinegar, oregano and olive oil. Mix well.
  2. Chop the vegetables. Wash the tomatoes, cucumber and pepper. Cut the tomatoes and cucumber into small cubes. Remove the seeds and white parts from the pepper, then cut it into small pieces too. Finely chop the onion.
  3. Assemble the gazpacho. Add the vegetables to the bowl with the dressing and toss to coat. Gradually add the cold water, tasting after each addition. The broth should be light, but with a distinct flavour of tomato, garlic, vinegar and olive oil.
  4. Adjust the seasoning. Season with pepper and adjust the salt, vinegar and oregano. Keep in mind that the ham will add salt at the end.
  5. Chill. Cover the bowl and leave it to rest in the fridge for at least 30 minutes. This allows the flavours to meld without making the vegetables too soft.
  6. Serve. Divide the gazpacho between bowls. Add the bread cubes and finish with the strips of ham and a very light drizzle of olive oil. Serve immediately.

How to get the Alentejo gazpacho just right

Tomatoes are the basis of the recipe and should be ripe, aromatic and free of overripe spots. If they release a lot of water, start by adding only 600 ml of cold water and adjust at the end. The aim is not to make a thick soup, but the flavour of the vegetables should not be diluted either.

Raw garlic becomes more intense as it rests. Two medium cloves are enough for four people; if they are large, use just one and taste the gazpacho once it has chilled. The vinegar should add freshness without overpowering the other flavours. Add it gradually, as it is easier to add more than to correct an excess.

Bread and ham: when should they be added?

Add the bread just before serving to keep some of its structure. If you prefer a softer texture, leave the cubes in the broth for two or three minutes. Avoid adding all the bread to the bowl in advance, as it absorbs the liquid and changes the consistency.

The ham should also be added at the end. Slice it thinly and into easy-to-eat pieces. As it is already salty, always taste the gazpacho before adjusting the salt. There is no need to fry it: at room temperature, it releases its aroma more fully and retains its delicate texture.

Wine to serve with Alentejo gazpacho

The acidity of the tomato and vinegar calls for a fresh, expressive white wine. We recommend Vidigueira Escolha dos Sócios Antão Vaz DOC, served at 10 to 12 °C. The wine’s freshness complements the vegetables, while its structure helps balance the olive oil and ham.

Make-ahead preparation and storage

You can prepare the vegetables and broth a few hours ahead and keep them covered in the fridge. Always store the bread and ham separately. Eat the gazpacho the same day to preserve its texture and aroma; if there are leftovers, refrigerate them and eat within 24 hours. Stir before serving, as the olive oil and vegetable juices may separate.

Frequently asked questions

Is Alentejo gazpacho blended?

Not in this version. The vegetables are cut into pieces and remain visible in a well-seasoned, very cold broth.

Do I need to peel the tomatoes and cucumber?

No, it is not essential. If the tomato skin is thick, you can blanch and peel it. For the cucumber, you can remove all the skin or leave a few strips.

Can I make the recipe without ham?

Yes. Simply leave it out and adjust the salt. The gazpacho still makes a complete starter or light meal, and you can add a little more bread.

Can I add ice?

You can add a few cubes when serving, but they will dilute the seasoning. It is better to use cold water and chill the gazpacho in the fridge.
